Gone Bananas Pancakes
This healthy, satisfying recipe on page 31 of Vegan Family Favorites is a new staple in our home. Conventional pancakes often leave me with a sugar high and then a quick crash. With no added sugar, but plenty of sweetness, your family will be set for the morning. With only 7 ingredients, and ones I almost always have on hand, these pancakes are a quick go-to for breakfast, lunch or dinner. I topped my pancake with Earth Balance buttery spread and Aunt Jemima sugar free syrup. While sugar free syrup does not have the richness and depth of flavor as pure maple syrup, it is the only syrup that helps keep my blood sugar balanced.
